I often have cravings for Mexican food but we always end up eating the same Mexican dishes. Quite boring right? When it was, once again, time for Mexican food, I came across this Mexican quinoa recipe. It’s fresh and so delicious, I really can’t get enough of it! Serve with some tortillachips and you can’t stop eating.

Mexican one-pot

  • 190 gr quinoa
  • 250 ml vegetable broth
  • 1 can corn kernels drained
  • 1 can kidney beans drained
  • 1 can diced tomatoes
  • 1 avocado
  • Jalapenos minced
  • 1 Lemon
  • 2 cloves garlic
  • 1 tbsp chili powder
  • 1/2 tbsp cumin
  • 1/2 tbsp smoked paprika
  • Salt & pepper


  • Heat a large skillet and fry the diced garlic and jalapeno peppers in some olive oil.
  • After a minute stir in the quinoa, broth, tomatoes, corn kernels, beans, cumin and chili powder. Add some salt and pepper to your tast and let it boil. When it’s boiling, turn down the heat and let it simmer.
  • It takes about 20 minutes before the quinoa is cooked, keep stirring and play with the fire when the end comes near. Don’t be afraid to put it higher when it’s still quite moist or turn it down and put on the lid if it’s going too fast.
  • Chop the avocado in small cubes and stir these through your quinoa dish. If it’s mixed properly, start to serve. Sprinkle some fresh lemon juice over the food and serve with a new wedge. Add some tortillachips and you’re done!
