I’ve been craving for coconut macaroons for quite some time now, but it seems as if they are not that easy to come by here in Berlin.. time to make them myself! This 4 ingredient-version is the most easy one you’ll ever come across, enjoy!
- 200 gr. shredded coconut
- 100 gr. sugar
- 4 egg whites
- Juice from half a lemon
Mix the egg whites until they are stiff and you can hold the bowl upside down without dripping.
Add the sugar and mix it through again.
Add the shredded coconut and the lemon juice and carefully fold it over with a spatula.
Place parchment paper on the oven tray and form small balls of the coconut mixture. Bake for 25 minutes on 160 degrees.
